Derby Day: Derby Pie Cupcakes

Chocolate Cupcake:

1 stick butter (softened)

1 1/4 cups sugar

2 eggs

3/4 cups flour

1/2 tsp. baking powder

1/4 tsp. baking soda

1/4 tsp. salt

1/2 c. cocoa

1/2 c. milk

1 tsp vanilla

Derby Pie Filling:

1/4 cup sugar

2 tbsp flour

1/3 c light corn syrup

1 egg (beaten)

3 tbsp melted butter

1/4 cup bourbon

1 tsp vanilla

1/3 cup chopped nuts (walnuts or pecans)

1/3 cup semi sweet chocolate chips

 

Brown Sugar Cream Cheese Frosting:

8oz cream cheese (softened)

1 stick butter (softened)

1 cup brown sugar

4-5 cups of powdered sugar

1 tsp vanilla

 

How to Make the Cake:

1. Preheat oven at 350. Line cupcake tray.

2. Combine flour, baking powder, baking soda, salt and cocoa, and set aside.

3. Cream together butter and sugar. Add eggs one at a time and vanilla.

4. Alternate adding flour mixture and milk until all ingredients and combined. Fill cupcakes halfway.

Filling:

Combine all filling ingredients in oven-safe dish and bake at 350 for 15 minutes. Cool filling and add a spoonful to each cupcake. (Cake will cook around filling. Cupcakes will be gooey!) Bake cupcakes at 350 for 18-22 minutes. Let cool before frosting.

 

Frosting:

Beat together softened butter and cream cheese. Add vanilla and brown sugar and beat until fluffy. Add powdered sugar until frosting is desired consistency. (You made need more or less.) Pipe or spread onto cooled cupcakes! Optional: Top with pieces of pie crust, chocolate chips or chopped nuts!

Makes: 12 cupcakes
